<p><P>PROBLEM TO BE SOLVED: To provide a beer-like sparkling alcoholic beverage not using malt, wheat, barley and rye. <P>SOLUTION: In a method for producing a beer-like sparkling alcoholic beverage by fermenting a fermentation precursor liquid, the beer-like sparkling alcoholic beverage having good characteristics such as good flavor and foam quality is obtained by producing a raw material liquid having good fermentation efficiency. Pea protein extracted from pea is preferably added to the fermentation precursor liquid. The method for producing the sparkling alcoholic beverage comprises using a carbon source-containing syrup, a nitrogen source, a soybean protein hydrolysis product as at least one part of the nitrogen source, hop and water as raw materials, further, if necessary, adding a pigment, a foaming substance/a foam retention-improving substance, and a perfume to produce a raw material liquid, and then adding beer yeast to the raw material liquid similarly as in a conventional beer-producing process. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
