PURPOSE: A dough composition for knife-cut noodles and clear soup and a manufacturing method thereof are provided to maintain chewy texture of the dough composition containing a large quantity of sorghum powder, and to facilitate digestion while protecting a stomach. CONSTITUTION: A dough composition for knife-cut noodles and clear soup includes 70 ~ 100 parts by weight of sorghum powder and 5 ~ 15 parts by weight of glutinous Indian millet meat juice. The composition includes soy cooking oil, grape seed oil and sunflower oil. Dough for the knife-cut noodles is manufactured by mixing wheat flour, the sorghum powder and the glutinous Indian millet meat juice(S4). |
