摘要 <p>Process is intended for the accelerated ripening of fruits and vegetables. It is effected by the introduction of substances which regulate growth and cause the liberation of the ethylene contd. in the fruits or in the substances themselves and/or resulting from the combination of the substance with the org. materials in the fruits. This phyto-regulating substance is 2-chloroethyl phosphoric acid. Its aq. soln. is passed through an electric heater and sprayed through a nozzle into the atmos. of a closed cell contg. the fruits; these are placed in racks or distributed freely in the ripening cell. The spray is controlled by a humidity probe connected to the automatic heating control. Perfectly matured fruits of high quality are obtd. by the process; the fruits retain their flavour and there is a total absence of waste. After 60-72 hr. treatment, amongst other effects, there is a diminution in the total acididity with an increase in the degree of sweetness. Poly-saccharides are broken down with the formation of sugare while tannic substances are rendered insoluble, so that the typical astringency of unripe fruit is eliminated.</p>
