PURPOSE:To prepare a jam-like food having excellent shape, color, taste and flavor, in a short time, in high efficiency, by passing raw material fruits and vegetables mixed with sugars and pectin through a pipe having low dielectric loss with pressure under heating with microwave dielectric heating. CONSTITUTION:100pts. of fruits of vegetables such as strawberry, orange, apple, carrot, cabbage, spinach, etc. is mixed with 40-120pts. of sugars such as sucrose, glucose, fructose, etc., 0.3-1pt. of pectin, and if necessary, 0.3-1pt. of an organic acid such as citric acid, malic acid, various fruit juice, etc., and the mixture is passed through a pipe having low dielectric loss, e.g. made of ''Teflon '', tetrafluoroethylene resin, etc., with pressure under heating at 70-95 deg.C, preferably 85-90 deg.C with microwave dielectric heating. |
