PURPOSE:To prepare a nutritious food capable of curing cancerous diseases, tubercular diseases, tumorous diseases, etc., by incorporating a powder of adlay seeds having shells with a powder of KOJI made from the adlay. CONSTITUTION:Adlay seeds having shells are washed with water, dried and pulverized to give a powder, which is then lightly roasted, steamed in a steaming kettle, dried, pulverized and selected to give a powder of the adlay seeds having shells (A). On the other hand, polished adlay seeds are washed with water, dried, pulverized, roasted and steamed to afford a powder of the adlay seeds, which is then spread on a hotbed prepared by laying a hemp cloth on a straw mat, cooled at about 35 deg.C and then mixed with seed KOJI molds. About 3l resultant mixture is then piled in one KOJI lid to form a convex hill. Several KOJI lids are then placed on top of each other in the form of a tier of boxes in a KOJI chamber and allowed to stand at about 28 deg.C for about 28hr. When the material temperature rises to about 38 deg.C, the central convex part of the piled mixture is recessed. When the mixture temperature rises to about 40 deg.C, the mixture is covered with a straw mat, and converted into a KOJI exhibiting the elasticity with a yellowish green surface. The resultant KOJI is then dried at about 95 deg.C, pulverized and screened to afford a powder of the KOJI made from the adlay (B). 100% component (A) is then incorporated with 10-30% component (B). |
