The present disclosure provides a dehydrated fried snack of pulse characterized in that the dehydrated fried snack having moisture content of less than 5% w/w, water activity value of less than 0.5 and shelf life up to 6 months. Further, the disclosure provides a method of preparing dehydrated fried snack. In addition, the present disclosure provides a system for preparing a fried snack. |
