PURPOSE:The titled expanded food, containing starchy material and 20-50wt%, based on the total weight, water-insoluble dietary fibers, having improved sense of eating and flavor, and useful as a low-energy food. CONSTITUTION:An expand food, containing water-insoluble dietary fibers (DF) which are slightly digestible polysaccharides consisting essentially of cellulose and hemicellulose, and prepared by weighing (A) a composition obtained by defatting, deproteinizing, purifying, and pulverizing corn, wheat, pulp, etc. (>= 50wt% water-insoluble DF, <=30wt% starchy material, <=15wt% protein and <=10wt% water) and (B) wheat flour, rice flour, etc. (>=70wt% starchy material, <=15wt% protein and <=15wt% water) to give 20-50wt% DF content in the product, kneading the resultant mixture with water, hot pressing the kneaded mixture, and reducing quickly the pressure to form the aimed food having 0.3- 0.7g/ml apparent specific gravity. |
