The device is intended in particular for treating certain types of fish, such as cat fish (Ictalarus Punctatus), whose ribs extend into the flesh of the belly. The fillets are separated by means of rotating cutters, which separate the fillets from the ventral and dorsal fins, which are associated with guiding members 2, 3, which penetrate into the corresponding notches of the belly and of the back, and by means of scraping tools, each placed in front of the guiding members engaged in the dorsal-fillet separation notches and each comprising two scraping cutters 10, 11, which are superimposed and substantially in coincidence separated by a slot into which the bones penetrate, the latter being preferably pushed towards the horizontal by a common bearing slideway 14. Application to machines for separating the fillets from fish, in order to improve their performance with regard to the quantity of flesh thus obtained. <IMAGE>
