PURPOSE:To produce a fried-bean having uniformly fried texture and giving agreeable feeling to the palate, by leaving the shell of a broad bean in the form of a band in the middle of the bean, and frying in an edible oil. CONSTITUTION:Raw broad bean is soaked and softened with water, and two incisions are applied to the middle part of the shell. The upper half of the shell 2 and the lower half of shell 3 are removed from the bean to leave a band-shaped shell 1 in the middle of the bean. The bean X obtained by the above process is fried in an edible oil. |
