A polyose-fatty acid complex is produced by the reaction of at least one polyose with at least one fatty acid, in particular in the form of a halide or anhydride. The fatty acid may be saturated or unsaturated and comprise 8 to 28 carbon atoms. This complex has a high moisturizing capability and unexpectedly an emulsifying capability, and can be used for preparing valuable cosmetic or pharmaceutic compositions.
