The invention relates to a process for producing lactulitol (D-mannitol-4-O- beta -D-galactopyranosyl) from a mixture derived from the hydrogenation of galactose, the said mixture containing lactitol and lactulitol, characterised in that it comprises the steps consisting in: a) passing the said mixture over a low-pressure chromatographic column containing a strongly acidic cationic resin; b) eluting the said mixture contained in the said column with an aqueous solvent so as to obtain at least two fractions, one of these fractions containing only lactulitol, the other fraction containing only lactitol; c) recovering the lactulitol contained in the said fraction(s) containing only lactulitol.
