Minced meat is moulded and shaped in an industrial scale machine. After mincing, the meat is divided into portions (B) corresponding to the weight of steak. Each portion is placed in a mould (4a) of the desired shape, then into it, without compression, spacing out the meat fibres. The steak (S) is then removed (9) from the mould. Also claimed is the industrial process for the prodn. of minced meat.
