<p>Prepn. of a cheese prod. comprises melting a quantity of cheese base component until it is more or less liquid, adding functional ingredient(s), whose functional properties are not obvious until used by the consumer, to the hot cheese, forming a homogeneous mixture, letting it cool and coagulate, grating or milling it, and adding 20-70wt.% (w.r.t. total wt. of cheese prod.) of this prod. to 80-30wt.% of at least one sort of grated or milled natural cheese. The functional ingredients are e.g. stabilisers, thickeners, or are capable of forming a golden-brown colour or a crust.</p> |
