The invention relates to a method and an apparatus for determining the mass distribution of a product, in particular a food product. This involves radiographing the product using X-rays, forming a raster [lacuna] of the local X-ray transmission values and determining relative and absolute local mass density values in the grid points, based on the X-ray transmission values with the aid of a computational algorithm. On the basis of these mass density values it is possible to determine the mass distribution and the mass of the product. At the same time, the presence of irregularities in the product can be detected.
