In a process to mill grist for mashing, the raw materials are introduced to a mill and ground open. The novelty is that: (a) before the mill system (1) is charged with the raw material (6), the mill system (1) is purged with an inert gas from a reservoir (13), largely displacing any air which the mill may have contained previously; (b) after the mill system has been charged with the raw material (6), the mill system is gas-sealed; (c) during the milling process, inert gas is released into the mill at various places to displace air which was introduced with the raw material (6), or which may have not have been displaced in the air-purging process; (d) also claimed is a suitable assembly.
