PURPOSE: A substance for lowering the cholesterol level in blood obtained by extracting a shrimp fermented liquid is provided, which can be used as a medicine and food for the treatment and prevention of hypercholesterolemia. CONSTITUTION: This aqueous fraction substance having a molecular weight of 400 to 40,000 Dalton is prepared by the process consisting of: centrifugally separating a shrimp fermented liquid at 8,000 to 12,000rpm for 10 to 15 min, recovering supernatant by removing a precipitate, filtering at 4 to 7 deg.C for 18 to 24 in the first stage, freeze drying, filtering at 4 to 7 deg.C for 18 to 24 in the second stage and extracting dried powder with distilled water.
