The invention refers to the wine industry, in particular to a process for production of natural sparkling wine. The process, according to the invention, includes: receiving of the wine material, assemblage, treatment of the assembled wine material, blending, treatment of blending, preparation of the fermentative mixture, secondary fermentation by the periodic method in hermetic reservoirs, refrigeration, administration of the expeditionary liqueur and isobarothermic bottling of the finished product.Summary of the invention consists in that the blending includes at least 40% of matured wine, and the expeditionary liqueur is prepared on base of macerate of fresh grape pomace in wine.The result consists in increasing the organoleptic indexes of the finished product and in enlarging the assortment of natural sparkling wines.Claims: 1
