PROBLEM TO BE SOLVED: To provide a method for masking the unpleasant odor (sulfur odor) of a food using eggs and enhancing other pleasant aromatic odor and flavor specific to the food, and the food using eggs produced by the method.SOLUTION: The method for masking the unpleasant odor derived from eggs in a food using the eggs and enhancing flavor specific to the food includes adding a rare sugar which contains at least D-psicose to the food made from eggs and food material other than eggs. |
