PURPOSE:The titled bulking agent having good fragrance and exhibiting a brown color, preferably useful for powdered seasoning, etc., obtained by spraying an amino acid solution or a mixed solution of the amino acid and fruit sugar upon crumbs granulated into flakes, followed by baking and powdering. CONSTITUTION:Crumbs are granulated into flakes, which are sprayed uniformly with 0.02-2.0wt% based on crumbs (calculated as dry base) amino acid and a monosaccharide dissolved in water. The sprayed flakes are exposed to an hot air at 120-170 deg.C so that drying is accelerated, the temperature of the flakes rises gradually and they are baked, and the aminocarbonyl reaction between the amino acid and the monosaccharide simultaneously produces heated fragrance to improve the flavor of the flakes. The baking and the occurrence of the heated fragrane are usually and preferably done by keeping the flakes at 110 deg.C-170 deg.C for 5-30min. The flakes are then powdered and sieved to give a product. |
