PURPOSE:To obtain gelatinized rice not yellowing, having reduced amount of crude fat and improved gelatinization degree free from a smell of drying by heat-treating immersed rice by a microwave oven, steaming rice by a rice steamer and drying. CONSTITUTION:Immersed rice in a charging tank 3 is fed to a throwing conveyor 5, heat-treated by a microwave oven 7, steamed by a rice steamer 9 and dried by a dryer 13 to give high-quality gelatinized rice. |
