Sterilisation of fruit juice

Prodn. of storage-stable fruit juice comprises: (a) adding sufficient alcohol to inactivate bacteria; and (b) extracting the alcohol from the juice by dialysis against an alcohol-free aq. phase through a hydrophobic microporous membrane. Also claimed are: (i) fruit juice obtainable by the above process; and (ii) the dialysis unit for carrying out the above process which comprises a chamber (7) with one or more compartments (11) having an inlet (12) for the alcohol-contg. juice and an outlet (19) for the alcohol-free juice. The compartments are sepd. by a hydrophobic membrane in the form of tubes through which the juice is passed. .
