PROBLEM TO BE SOLVED: To provide a method for efficiently separating saturated fatty acids and unsaturated fatty acids from a mixture of fatty acids by a natural fractionation process. SOLUTION: A method for producing the saturated fatty acids or the unsaturated fatty acids comprises the natural fractionation process for separating the saturated fatty acids and the unsaturated fatty acids in raw material fatty acids, wherein a polygycelol fatty acid ester is added to the raw material fatty acids, and the polygycelol fatty acid ester having a transparent melting point (y) satisfying the following inequity (1): 0.38x+13≤y≤0.54x+44 [x is a ratio (wt%) of the saturated fatty acids (having 12-22 carbon atoms) in the raw material fatty acids; and y is the transparent melting point (°C) of the polyglycerol fatty acid ester] is used.
