PURPOSE:To obtain a meat block having the same tissue as ordinary meat, by bonding meat scraps firmly with a specific binder. CONSTITUTION:Scraps of meat, fish, etc. are smeared with konjak powder or with purified mannan powder or immersed in an aqueous solution of mannan, etc. The konjak mannan is swollen to a high viscosity colloid with water or blood exuded from the meat, etc. The scraps of meat, etc. covered with the swollen mannan are dipped in an aqueous solution of an alkaline earth metal hydroxide (e.g. Ca(OH)2) for a short time, and pressed together to form a block of meat. |
