PURPOSE:To obtain a smoked food consisting of a tough semipermeable membrane capable of permeating an aromatic and seasoning components in smoke, by forming an aqueous solution of a composition prepared by kneading specific polysaccharides in a specific concentrated solution into a sheetlike form and drying the formed sheet. CONSTITUTION:A coat of a smoked food obtained by homogeneously kneading (B) at least one of polysaccharides in carrageenan, alginic acid, derivatives thereof, agar, locust bean gum, guar gum, tamarind seed polysaccharides, pectin, xanthan gum, glucomannan, chitinous substance, pullulan and cyclodextrin in (A) a concentrated solution of at least one of polyhydric alcohols, sugaralcohols, monosaccharides, disaccharides and oligosaccharides in the presence or absence of an alkali and directly forming (C) the resultant aqueous solution of the natural polysaccharides.polyhydric alcohol composition or reinforcing the composition with a thin textile product, forming the reinforced composition into a sheetlike shape and drying the resultant sheet. |
