PURPOSE: To obtain a roughly ground fish meat sausage as a fish meat food which utilizes the merit of fish meat based on a healthy idea and is tasteful even when it is eaten as it is. CONSTITUTION: Ground fish meat is mixed with pretreated fish meat blocks so that the meat blocks becomes in a roughly ground state and a casing is filled with the mixed fish meat to give fish meat sausages. After the pretreated fish meat is admixed, the meat blocks are roughly ground, or the meat blocks are roughly ground, then mixed. The fish ground meat is obtained by mixing raw material fish meat with salt, seasonings and other needed foodstuffs and grinding the mixture. The fish meat blocks are pretreated by soaking them in a seasoning solution. The fish meat mixture is charged in a casing, subjected to the primary heat treatment, healed, vacuum-packed by deep drawing, secondarily heat-treated, then the casing film is peeled off to give the objective roughly ground fish meat sausage which enables chilled distribution. |
