PURPOSE:To obtain the subject mold resistant to staining and having excellent durability by washing a food-forming mold, immersing in an organic solvent solution of a specific surfactant and forming a chemically adsorbed monomolecular layer on the surface of the mold. CONSTITUTION:A food-forming mold (preferably cake-baking mold, cookie- baking mold, bread-baking mold, chocolate-forming mold, jelly-forming mold, ice cream-forming mold, oven pan and/or ice tray) is washed and immersed in an organic solvent solution of a chlorosilane surfactant having a chlorosilane group of formula SiClnX3-n ((n) is 1, 2 or 3; X is functional group) on one end and a fluorocarbon group on the other end. A chemically adsorbed monomolecular layer composed of the above surfactant is formed on the whole surface of the food-forming mold to obtain the objective mold having excellent stain- proofing property, water and oil repellency, etc.
