The invention relates to a new method for transforming feedstock comprising at least one sugar into 5-(hydroxymethyl)furfural, in which method the feedstock is brought into contact with one or more organic catalysts in the presence of at least one solvent, which is water or an organic solvent, either alone or in combination, at a temperature ranging from 30°C to 200°C, and under a pressure ranging from 0.1 MPa to 10 MPa, the organic catalysts being selected from compounds of the sulfonamide family selected from monosulfonamides and bisulfonamides. |
