The invention relates to apparatuses for finely comminuting, emulsifying or finely comminuting and emulsifying biological raw materials, in particular protein-rich raw materials. The apparatuses are characterized in particular by an improved comminution and/or emulsification of protein-rich biological raw materials. To this end, an apparatus has a conveyor device that transports the biological raw material, a first comminuting device arranged downstream of the conveyor device and comprising at least one rotating blade and at least one stationary perforated disc, at least one second comminuting device arranged downstream of the first comminuting device and comprising a first stationary perforated disc and at least one rotating blade and a second stationary perforated disc, and drives for the conveyor device and the rotating blades. Furthermore, the perforations of the first perforated disc of the second comminuting device are larger than the perforations of the last perforated disc either of the first comminuting device or of an upstream second comminuting device.
