PROBLEM TO BE SOLVED: To provide yeast including γ-glutamyl dipeptides such as γ-Glu-Cys or the like represented by a general formula γ-Glu-X, and yeast extracts of the same prepared by using the yeast.SOLUTION: There is provided a yeast which is modified so as to increase activity of γ-glutamyl dipeptide synthase, and reducing activity of glycine synthase. |
