PROBLEM TO BE SOLVED: To provide a method for a rice-like food product having excellent physical properties such as strength and the return ratio and a favorable texture when cooked, and to provide a rice-like product obtained by the method.SOLUTION: The method for producing a rice-like food product includes: a first gelation process of gelling an alginic acid or a salt thereof by contacting a solution containing agar, the alginic acid or the salt thereof and a solution containing glucomannan, and a multivalent cation solution not showing alkalinity; a second gelation process of gelling the glucomannan by contacting a gel obtained by the first gelation process and an alkaline solution; a third gelation process of gelling the agar by cooling; at least either a dehydration process of dehydrating the gel or drying process of drying the gel after the first gelation process to the third gelation process; and a molding process of molding the gel in the shape of rice. |
