The present invention relates to a black lotus root and a method for preparing the same comprising a lotus root ripening step for containing a lotus root chopped in a container through which air is not passing through, and indirectly heating the container through a heating apparatus storing the container through moisture self-contained inside the container. In addition, a caramel increasing step alternately performed at a temperature increased than a reference temperature inside the container in the indirect heating process is included. Therefore, a browning phenomenon of the ripening lotus root is expressed to increase a sugar content. |
