PROBLEM TO BE SOLVED: To develop an oil-and-fat for roux, using a plant oil-and-fat as the main raw material oil-and-fat, low in anxiety of cholesterol intake, and capable of imparting body to the roux.SOLUTION: There is provided an oil-and-fat for roux, which comprises cacao fat obtained from roasted cacao beans, wherein the cacao beans-roasting temperature may be 100-150°C, the cacao beans roasting may be nib roasting, and the oil-and-fat may contain the cacao fat of 0.1-18 mass%. |
