PROBLEM TO BE SOLVED: To provide a production method of rice cake which remains soft, even after being left for long period.SOLUTION: The production method of rice cake is configured so that: glutinous rice, powders of glutinous rice, or top grade rice flour made from non-glutinous rice are mixed with water and deacylated gellan gum, then the mixture is heated by vapor and kneaded, for forming a rice cake-like body; then, when temperature of the formed rice cake-like body becomes equal to or less than deactivation temperature of amylolytic enzyme, the amylolytic enzyme is added thereto and heat is insulated; after maintaining the heat insulation time for 1 hour or more, coupling of rice cake components which are coupled in the rice cake-like body is sheared by agitation.SELECTED DRAWING: Figure 3 |
