The present invention relates to a method of preparing a physiological active substance-enhanced fermented soybean and the physiological active substance-enhanced fermented soybean prepared by the method. The present invention provides a method of preparing a fermented soybean which enhances contents of physiological active substances such as γ-aminobutyric acid, isoflavone and others, and has antioxidant activity by germinating gemmule of soybean, steaming the germinated gemmule of soybean, introducing lactic acid bacteria into the steamed germinated gemmule of soybean, and fermenting the lactic acid bacteria-introduced steamed germinated gemmule of soybean, and a fermented soybean prepared by the method of preparing the fermented soybean. A physiological active substance-enhanced fermented soybean prepared according to the present invention is capable of being used as materials for lactic acid bacteria concentrate, health food, beauty food, functional food such as tablet or capsule, medicine and medical supplies, and others. |
