PROBLEM TO BE SOLVED: To provide a technique that enables fresh use by a simple method.SOLUTION: A production method of a hard-shell clam removed of acridity has a step of taking out a living hard-shell clam from seawater, and imparting a drying stress or a freshwater stress to the hard-shell clam, and a step of returning the hard-shell clam to the seawater and breeding it at 5°C or less for two weeks or more. After breeding the hard-shell clam by the production method, the hard-shell clam is immersed in the heated freshwater or seawater for a constant period of time, and thereby the hard-shell clam comes to open a shell while being alive, and the flesh and adductor muscle enabling fresh use can be taken out by hand easily.SELECTED DRAWING: Figure 1 |
