The present invention relates to a disposal apparatus and a method of organic solid-containing waste, and more specifically, to a waste disposal apparatus and a method which adjust the temperature of a first combustion chamber in a fixed range by controlling the flow rates of the first combustion air and the second combustion air. According to the present invention, the disposal apparatus and method can stably combust waste regardless of the state or type of the waste and can minimize the concentrations of pollutants such as carbon monoxide, dioxin, etc. in exhaust gas. The disposal apparatus of organic solid-containing waste comprises: the first combustion chamber; a second combustion chamber; and a first combustion chamber temperature controller.
