摘要 The present invention relates to soybean-curd containing rice rinse water which uses concentrated rice rinse water. According to the present invention, a large quantity of rice rinse water generated during a rice processing process can be used as a functional food ingredient after the same passing through a concentration process and a sterilization process. The soybean-curd containing rice rinse water is functional food containing methionine and cysteine which are short in soybean. Thus, the soybean-curd containing rice rinse water can contribute to the promotion of public health.
