摘要 The present invention relates to a manufacturing method of sprout coffee for reducing the generation of carcinogens and harmful carbides, and more specifically, to a method for manufacturing eco-friendly sprout coffee having excellent taste and flavor by reducing the generation of harmful carbides. The method comprises the following steps: cleaning coffee beans; sprouting the cleaned coffee beans; and roasting the sprouted coffee beans at a low temperature of 150°C or less with a ceramic roasting apparatus. According to the present invention, the method of manufacturing the sprout coffee, when the sprouted coffee beans are roasted with a low temperature ceramic roasting apparatus, risks of generating harmful components, such as carcinogens, are remarkably reduced, and destruction of nutritious components and materials, such as a gamma-amino acid component having an effect of promoting brain metabolism and preventing high blood pressure, tyrosine helpful to enhancing learning ability and memory, and chlorogenic acid having an anticancer effect, is prevented. Moreover, enzymes generated during a sprouting process of the sprout coffee are activated.
