Crystallization of furanic compounds

The invention relates to a method for preparing furanic compound crystals from sugars comprising the steps of
- converting sugar or sugar alcohol into a furanic compound in a reaction mixture comprising an organic solvent, thereby obtaining a product mixture comprising a furanic compound dissolved in said organic solvent and water;
- preferably removing water from the product mixture; and
- simultaneously crystallizing the furanic compound and the organic solvent by cooling the product mixture, thereby obtaining a slurry comprising solvent crystals and furanic compound crystals; and
- separating the solvent crystals and the furanic compound crystals.
