摘要 THE PRESENT INVENTION RELATES TO A METHOD FOR EVALUATING DIFFERENT EXTRACTION CONDITIONS ON THE YIELD OF DRAGON FRUIT PECTIN, CHARACTERIZING THE PECTIN OBTAINED DRAGON FRUIT AND DEFINING THE STRUCTURE OF PECTIN USING INFRARED SPECTROSCOPY (FTIR). ALSO, THE PRESENT INVENTION DEMONSTRATES PECTIN OBTAINED FROM DRAGON FRUIT AND THE USE FOR THE MANUFACTURE OF A FOOD INGREDIENT, FOOD PRODUCT OR FOODSTUFF. ACCORDINGLY, THE PRESENT INVENTION PROVIDED A METHOD OF OBTAINING PECTIN FROM DRAGON FRUIT (HYLOCEREUS POLYRHIZUS), WHEREIN THE METHOD INCLUDES THE STEPS OF: A) OBTAINING DRAGON FRUIT SAMPLES; B) PREPARING DRAGON FRUIT PEELS FROM THE DRAGON FRUIT SAMPLES; C) SUBJECTING THE FRUIT PEELS IN AT LEAST THREE DIFFERENT EXACTION CONDITIONS; D) OBTAINING AN EXTRACT OF DRAGON FRUIT PECTIN AND PURIFYING THE DRAGON FRUIT PECTIN; E) OBTAINING A PURIFIED DRAGON FRUIT PECTIN; F) DRYING THE PURIFIED DRAGON FRUIT PECTIN; G) ANALYZING AND CHARACTERIZING THE PURIFIED DRAGON FRUIT PECTIN BY MEANS OF DETERMINING ASH AND MOISTURE CONTENT, EQUIVALENT WEIGHT, METHOXYL CONTENT, ANHYDROURONIC ACID (AUA), AND ESTERIFICATION; WHEREIN THE DRAGON FRUIT PEELS ARE A DRIED FORM; SAID DRAGON FRUIT PECTIN HAVING A MOISTURE CONTENT BETWEEN 11.3% AND 11.33%, AND HAVING ASH CONTENT BETWEEN 6.88% AND 11.55%; SAID DRAGON FRUIT PECTIN FURTHER OBTAINED YIELD BETWEEN 14.96% AND 20.14%; WHEREIN THE DRAGON FRUIT PECTIN PROVIDES AN EQUIVALENT WEIGHT BETWEEN 475.64 AND 713.99 AND METHOXYL CONTENT BETWEEN 2.98% AND 4.43%; AND WHEREIN THE DRAGON FRUIT PECTIN INCLUDES ANHYDROURONIC ACID CONTENT BETWEEN 45.25% AND 52.45%, AND ESTERIFICATION BETWEEN 31.05% AND 46.96%.
