A FERMENTATION PRODUCTION PROCESS OF L-SORBOSE WITH HIGH CONCENTRATION

The present invention provides a fermentation production process of L-sorbose with high concentration, using gluconobacter melanogenus as a production strain and usi-ng D-sorbitol as the substrate, adding 0.1 mg/ml-5 mg/ml of gelatin into a seed strain liquid culture medium, and adding 0.1 mg/ml -5 mg/ml of citric acid and 0.1 mg/ml -5 mg/ml of itaconic acid in a respective or combined manner into the fermentation liquor at any time of 0-16 hours of fermentation. As a result, the content of the L-sorb-ose after the fermentation reaches more than 420 mg/ml.
