PROBLEM TO BE SOLVED: To provide a novel fish extract production method in which the generation of an ammonia odor occurring when using a cartilaginous fish as a raw-material and cooking and processing the cartilaginous fish, is suppressed, and the delicious taste and rich taste are enhanced.SOLUTION: Provided is a fish extract production method in which there is no occurrence of ammonia odor and in which the delicious taste and rich taste are enhanced, characterized by using a cartilaginous fish as a raw-material and heat-treating the raw-material in the presence of a reducing sugar, and followed by an enzyme treatment.SELECTED DRAWING: None |
