PURPOSE:To prepare cooked rice preservable over a long period in a simple package while keeping the nearly constant quality by adding a proper amount of carrageenan to polished rice and cooking the mixture. CONSTITUTION:Polished rice is mixed with a proper amount (e.g., about 1-5%) of carrageenan, cooked by conventional rice-cooking method, packaged at normal temperature and sterilized e.g., by high-frequency wave irradiation. |
