PROBLEM TO BE SOLVED: To widen the applications and use of beet roots.SOLUTION: The present invention provides a fermented and matured beet wherein raw beet is subjected to self-fermentation in an environment at a temperature of 55°C-90°C and a humidity of 60%-95% so that its total polyphenol content becomes not less than 30 times larger than that of raw beet, 750 mg/100 g or more, and its tannin content becomes not less than 40 times larger than that of raw beet, 650 mg/100 g or more.SELECTED DRAWING: None |
