Nowadays, people tend to be more innovative in terms of their daily diet and patronize nutritious product. Nuggets are considered one of the processed foods that people really enjoy eating. Cauliflower(Brasicca oleracea var Botrytis), potato(Solanum tuberosum), and squash fruits(Cucurbita) are vegetables that are considered extremely-nutrient dense foods. The objective of the study is to formulate, utilize and discover the extent of acceptability of cauliflower(Brasicca oleracea var Botrytis), potato(Solanum tuberosum) and squash fruit (Cucurbita) as a new form of nuggets comprising the steps of: preparing and measuring raw materials such as cauliflower, potato, squash fruit, egg, bread crumbs, cheese, salt, pepper and flour; peeling of squash and potato; washing and boiling; mashing the three vegetables; mixing all the raw materials; portioning as to the desired size; shaping; breading; deep-frying until golden brown; cooling; packing and labeling. |
