The present invention relates to a biscuit dough comprising:
protein in an amount of at least 8wt% by weight of the final biscuit;
fiber in an amount of from 5 to 20wt% by weight of the final biscuit;
wherein the dough comprises native whey protein in an amount of at least 0.5 wt% by weight of the dough, and wherein the fiber comprises viscous soluble fibers and/or insoluble fibers.
