The present invention relates to a method for preventing softening onion tissues by using calcium carbonate. The method includes: a first step (S100) of peeling onions, washing the peeled onions with distilled water, cutting the onions into the size of 3 x 3 cm, and sorting out only onion bits with the thickness of 5 mm or more; a second step (S200) of preparing a calcium carbonate additive group of the concentration rate of 100 mM by using a 5% acetic acid after the first step; and a third step (S300) of storing 20 g of the sorted onion bits in a 120 mL glass bottle with a lid, pouring 100 mL of the prepared calcium carbonate additive group therein, and maintaining the bottle at 25 °C in a temperature maintaining apparatus for 60 days after the second step. Accordingly, the present invention can maintain the shelf life of onions and minimize quality changes in order to develop anti-aging products and secondary processed products such as onion kimchi. |
