发明名称 METHOD FOR PREVENTION OF THE ONION TISSUE SOFTENING USING CALCIUM LACTATE
摘要 The present invention relates to a method for softening onion tissues by using calcium lactate. The method includes: a first step (S100) of peeling onions, washing the peeled onions with distilled water, cutting the onions into the size of 3 x 3 cm, and sorting out only onion bits with the thickness of 5mm or more; a second step (S200) of using the distilled water to prepare a calcium lactate additive group of the concentration rate of 30 mM after the first step; and a third step (S300) of storing 20g of the sorted onion bits in a 120 mL glass bottle with a lid, pouring 100 mL of the prepared calcium lactate additive group therein, and maintaining the bottle at 25 °C in a temperature maintaining apparatus for 60 days after the second step. Accordingly, the present invention can maintain the shelf life of onions and minimize quality changes in order to develop anti-aging products and secondary processed products like onion kimchi.
