FIELD: food industry.SUBSTANCE: invention relates to the food industry, in particular, to a method for the production of an artificial casing for food products, to the artificial casing produced by such method and such casing filling with food products. One obtains a gel undergoing extrusion and containing fibrous collagen dispersion. One installs an extrusion head containing an outlet hole for the release of the extruded material; such hole has a closed noncircular geometrical shape. The gel undergoing extrusion is expressed through the outlet hole to produce a hollow tubular film by way of compressed fluid medium injection under sufficient pressure so that the tubular film assumes a cylindrical shape; the pressure inside the tubular film is sustained higher than that outside the film.EFFECT: manufacture of an artificial casing for food products.9 cl, 6 dwg, 7 tbl, 4 ex |
