The present invention relates to a producing method of a roasted sweet potato paste dried product. The producing method comprises the steps of: selecting sweet potatoes; putting the sweet potatoes in water and excluding the sweet potatoes floating on water after secondarily washing the sweet potatoes; aging the sweet potatoes; baking the sweet potatoes; cooling the sweet potatoes; peeling the skin of the sweet potatoes; cutting the sweet potatoes after quickly freezing the sweet potatoes; vacuum-packing the sweet potatoes after mixing the sweet potatoes; compressing a vacuum-packed plastic bag; checking whether foreign substances remain or not; inspecting the sweet potatoes using a metal detector after firstly freezing the sweet potatoes; secondarily completely freezing the sweet potatoes; cutting the secondarily frozen sweet potato paste; drying the sweet potatoes paste after putting the sweet potatoes paste in a drying tray; storing the sweet potatoes paste after putting and sealing the sweet potatoes paste in a plastic bag; drying the sweet potatoes paste after thirdly freezing the sweet potatoes paste; and sterilizing the sweet potatoes paste after dividing the sweet potatoes paste while matching the weight of a product.
